Fluffy Vanilla Pancakes

 

Ingredients:
11/4cups of unbleached all purpose flour
21/2tbsp granulated sugar
2eggs
11/3cups of 1% partially skimmed milk
1tsp pure vanilla flavor
2 tbsp. vinegar
1/2tsp salt
3tbsp olive oil
2tsp baking powder
 1 Extra teaspoon olive oil( for frying)

Method:

Mix all the dry ingredients in a bowl, set a side. Whisk all the liquid ingredients except the extra oil, and add to the dry ones. Whisk everything together until there are no lumps in the barter. Set a side for about 5mins. Apply the extra oil on the frying pan, allow the pan to warm up on a medium heat. Then pour about 1/4 of a cup of the mixture to the frying pan. Allow it to fry until the top becomes bubbly, flip it over and fry the other side until golden brown. Do the same for the rest of the barter.

Top with any fruit of your choice and, or syrup.
