How to cook Nigerian [Steamed] Stew| No frying involved. Perfect for those cutting down on fat...........



Ingredients:
1cup of medium sized tomato paste[395ml]
1 medium sized onion
1/4cup of olive oil
salt to taste
2 large bouillons
1tsp bouillon powder
1/4tsp rosemary leaves[dried]
1heaped tsp hot pepper[optional]
1/tsp curry

Method:
Blend the Tatashi/red pepper with the onion and pour into the clean pot. Using a tea spoon, add the tomato paste on the tatashi mixture but do not stir or mix. Cover the pot and allow to boil. Boil until the water is gone. Then add the bouillon, and the dried pepper and stir to mix.
Meanwhile while the tatashi and onion mixture was on the fire, process the meat and season with the ingredients; curry, rosemary leaves, salt,......... set aside.


After the water in the pot is almost gone. Add the chicken and pour the 1/4cups of oil over it and stir to mix. Cover the pot and Lower the heat. Cook until the chicken begins to produce its water. stir from time to time. Add about 1 1/2 cup of water, stir and cover the pot and cook at low heat. Stirring from time to time to avoid burning. Cook until films of oil begins to appear on top of the stew, by now the sour taste of the tomato is completely gone. You can continue cooking until the stew thickens to your taste. Then go ahead and serve with rice or any food of choice.
