Slow cooker Roast beef


Most times when people hear about roast beef, the first thing that comes to mind about making it, is using the oven, but this time around, we are going to twist things around. We will be using the slow cooker this time.




Roast Beef

Ingredients:
1.7kg boneless roast beef
1tbsp flour
1/2 tsp curry
1/2 tsp thyme
1/4 cup grated onions
3/4 tsp seasoning salt.
1/4tsp jalapeno pepper
1tbsp veg. oil
11/2 cup chicken/beef broth
1tbsp parsley
1tbsp cilantro
2garlic cloves, minced
1 medium onions chopped
some carrots chopped

Preparation:
Wash the beef, set aside. Mix the curry, thyme, grated onions and seasoning salt together, and apply them all over the beef, sprinkle with the flour and pat down. On a clean frying pan, spread the oil, and brown the beef. Layer the carrots, onions, garlic, cilantro, jalapeno pepper and parsley in a slow cooker, transfer the beef into the cooker and, pour in the broth. Turn the slow cooker to high, and cook for about 4-5 hours, or until it is soft when pierced with a fork. Transfer the meat to a clean plate.You can use the broth from the meat for gravy.

Gravy preparation:

11/2 cups of broth
1cup of water
2tbs corn starch
salt to taste.

 Mix the corn starch in the water, and add to the broth, allow to simmer, stirring from time to time, taste and add salt as desired. Serve the beef with the gravy.

Left over beef  can be used for roast beef burger. Cheers!
